Hurray for the green bunch of goodness! Here is a recipe for it:
Roasted Asparagus
1lb. fresh asparagus, tough ends broken off
1½ tsp. olive oil
salt& pepper to taste
Preheat oven to 400 degrees. Wash & drain asparagus well. Toss asparagus with 1 ½ tsp.olive oil, sprinkle with pepper & salt and place on rimmed cookie sheet.Bake in preheated oven for 10 minutes. Remove from oven & let stand about 4- 5 minutes before serving. Note: if asparagus is very thick you may need to roast about 12 minutes. Serves 4.
