Almond Nut Rice Balls

Yummy! Found the inspiration on the back of Erewhon Crispy Brown Rice Cereal box. I modified it slightly (my recipe shown below) and the results were delicious-and high in protein.
Almond Nut Rice Balls
1/2 c almond butter
1/2 c honey
1/2 c chopped pecans & almonds
1/2 tsp vanilla extract
1/2 tsp cinnamon
2 c brown rice cereal
Mix everything but cereal together in a bowl. Add cereal and gently stir until well coated. Form mixture into whatever size ball you like and place on waxed paper (or a lightly oiled dish). I store them in the fridge because the almond butter needs to be refrigerated.
Very yummy. The balls didn’t hold their form too well but they still taste delicious. I wonder if I had just spread the mixture in a lightly oiled 9×13 and made them bars it would have work better.
This recipe can be easily tinkered to whatever you like-agave nectar or brown rice syrup instead of the honey; any kind of nut butter and chopped nuts. You can roll them in coconut. Add dried fruit to the mixture-a ball of trail mix goodness!
I later double checked the label and this specific brown rice cereal contains barley malt-not gluten free. Oh well.
Mr. B likes them and doesn’t want to share anyways!
