These candies turned out to be a hit for the young and old alike. Informing the taste testers that the candy was healthy only made them want it even more!
-Smaller is better. These treats are sweet and rich.
-Keep from touching once another when storing-otherwise they will melt into each other and are next to impossible to pry apart.
-Add more flax seed and currants.
1 cup Almond Butter (Trader Joe’s has an amazing and well-priced almond butter)
1 cup Brown Rice Syrup
1/4 tsp vanilla extract
3-8 tbsp Currants (a type of red, white, or black berry from the gooseberry family-you could also use raisins, or any other type of dried berry-blueberries would probably be delicious!)
2-6 tbsp Flax Seed
1/4 c chopped walnuts
Heat syrup & butter in a saucepan on the stove, stirring constantly or it will burn. Bring to a boil, reduce heat to low & continue to cook for another 5 minutes. Be sure to stir continuously. Remove from heat and add remaining ingredients. Mix until well blended. Drop onto parchment paper and refrigerate.
